Gin and Tonic Granita
Frozen Gin & Tonic - Fancy Dessert or Just Because! Granitas are an easy way to turn your G&T into a delicious dessert. By increasing the ratio of tonic to gin and adding a bit more sweetness, this gin and tonic freezes easily. Just follow the simple steps for a new way to enjoy a gin and tonic cocktail!
Instead of drinking a G & T, how about eating one with a spoon? Easy to serve as a delicious dessert at a summer picnic or simply keep it in your freezer for whenever the fancy strikes you.
Make simple syrup. In saucepan, heat 6 ounces of water with 1/3 c. of granulated or fine sugar until sugar is dissolved. Do not boil. Set aside to cool.
In a freezer safe 8x8 or 9x7 container, mix gin, simple syrup and tonic water.
Zest lime and lemon. Then squeeze both. Add to mixture. Stir to incorporate.
Place uncovered container in freezer. After 1-2 hours and as it is just starting to freeze, take a fork and gently scrape to mix. Return to freezer.
Repeat process every 1 - 2 hours ensuring each time to mix and scrape with a fork to "fluff" the ice. The granita is ready once it is the texture of flaked snow.
Cover granita and keep frozen until ready to serve.
Scoop into bowls or glasses. Garnish as desired with additional zest, mint or berries.
