What's better than our Perfect Summer Punch cocktail on a hot day? It's transforming that cocktail into a boozy popsicle of course! For all the kids at heart, say hello to our Watermelon Gin Mint Mojito popsicle!
Ingredients

4 oz. Conniption American Dry Gin

12 oz. fresh watermelon juice (strained to remove pulp)

2 - 3 oz. fresh lime juice

3 - 4 oz. 1:1 simple syrup

handful of mint
Directions
First, make the simple syrup in a saucepan with 3 oz. water and 3 oz. granulated sugar. Heat until sugar is dissolved but do not boil. Remove from heat.
Wash and de-stem mint. Add mint leaves to cooling simple syrup. ** Depending on the amount of mint flavor desired, adjust the amount of leaves and/or the amount of time the mint macerates in the syrup. Then, strain mint leaves from simple syrup.
In a pitcher, combine gin, fresh watermelon juice, lime juice and cooled simple syrup. Stir and taste for sweetness.
If too sweet, add more lime juice. If not sweet enough, add more simple syrup. It all depends on how ripe and sugary the fresh watermelon is.
Pour mixture into popsicle molds. Set in freezer for approx. 45 min - 1 hour when they're just starting to set.
Add popsicle sticks to the molds once the the mixture is strong enough to hold the stick upright. Leave popsicles to freeze completely.
Once ready, ease the popsicle out of the mold and enjoy on a hot summer day!
